A versatile and delicious warm pearl barley salad with mustard, lemon juice and fresh garden herbs.
1 cup pearl barley, rinsed in a fine mesh strainer
Coarse salt and freshly ground pepper
2 tablespoons minced shallot
1 tablespoon Dijon mustard
2 teaspoons lemon juice, more to taste
3 tablespoons extra-virgin olive oil
¼ cup thinly sliced scallion greens or chives
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh Italian parsley
Meanwhile, whisk shallot, mustard, lemon juice and olive oil together in the bottom of a serving bowl. Add the warm barley and herbs and stir to combine. Season to taste with salt and pepper and additional lemon juice. Serve warm.
