Easy and flavorful marinated tomatoes combine with leafy greens, soft goat cheese and toasted almond slices to create an unforgettable summertime salad.
Heat the olive oil in a small skillet over medium heat. Add almonds and a pinch of coarse salt. Cook until almonds are golden brown, about 5 minutes. Transfer to a plate to cool.
Arrange the marinated tomatoes on a large serving platter with their juices. Toss gently with the lettuce greens. Scatter the goat cheese and toasted almonds over the top. Serve.
